My diet is mostly from ethnic origins, precisely Cameroon.
My diet consists mostly of
spinah,or green vegetables of different varieties, pumkin seeds, red or black beans, black eye peas, corn( millet) plantains, yams, cassava, cocoyams and rice. I some times use a bit of plam oil, depending on what am cooking and sunflower oil.
We eat chicken and fish, and on some occassion meat.
We also love eating salads
Fruits, the kids and I love to eat are apples, oranges, green grapes, grape fruit, strawberries and when it's afordable some extoic fruits.
We also like to eat some nuts, however my son's got allergies to peanuts.
For breakfast is cereals, for me museli, and Fibre one, for the kids cheerios and crunchy nuts
It would be interesting to have an expert tailor my diet based on the above foods. When I watch diet shows, talking about nutrition, it usaully uses Western meals that i hardly eat, and i would prefer to cook one meal for the whole house rather than two meals.

I have Coeliac disease so have a gluten free diet which means no wheat, barley, rye or oats. Although this is fine at home I really struggle with packed lunches as I do not enjoy GF bread.
Zora - it sounds like you have a pretty natural gluten free diet so I was wondering what sort of things you have for lunch?
Although I initially lost weight when I was first diagnosed I have put it all back on and am now struggling to lose weight as I am a bit of a snacker. Any yummy, healthy (and gluten free) snacks would be greatly appreciated.

I've been put on the Portfolio Diet for 6 months by the hospital clinic as a first step in reducing very high Cholesterol. If I can't make a significant difference, I'll have to go on statins but they are letting me have a go myself first.
Lots of fresh veg and fruit, oat products, obviously no saturated fat but the key components are soya, almonds, fibre and a plant stanol product like benecol.
This has been my first 'big' week of it. It's interesting! Whether there will be a side benefit of weight loss is something I don't know yet.

Noodle, have you tried using spelt flour to make your own bread? I have to avoid wheat and bread is a real weakness of mine.
For lunches how about some thick vegetable soup or a rice salad?

Hi, it's been a good last week with regards to the work outs. Thanks all with regards to my diet. It all sounds good, however the trick is how it is prepared. For African ethnic foods, it takes 45mins to 2 hrs to cook depending on what.
I have ben struggling with the food thing, the more i did the workout the hungrier i decame. I think I need to eat more carbs before my work out, burn it of, then top off later. What do you guys think?
I would love to put some receipes up, however it is easier to watch someone cook it show you how. I love making up receipes. Infarc I made one on Friday, which is pretty easier to follow, 20mins to prepare. Check it out at the end :)
I try not to cook the vegetables for too lonng b/c it then reduces the amount of nutritents and antioxidents one digest. For my guest I will prepare the food the normal way, or I will have no one show up at mine for any parties :) (As an African woman IT'S A BIG MUST TO KNOW HOW TO PREPARE OUR FOOD) yeah i know sounds CHAUVINISTIC :) bUT I LOVE COOKING AND SO DO MY BROTHERS.
We do eat bread, but not a lot. If i didn't mention, we have oat meal at least twice a week( not my kids favorite) to make it more palatable, i put in a dash of cinnamon or nutmeg.
When I make pancakes, I blend Weetabix into a fine powder and mix with the batter. My kids do not like Weetabix, so only way they would eat it is in pancakes. I do the same with mix vegetables like peas, corn and carrots, I use a hand blender and chop into small pieces, and mix with boiling rice.
Dinamic, what is a Portfolio Diet?
Receipe jumbo Shrimps sauted with spinach, diced carrots/swede and a hand a hand full of boiled rice mixed with some red kidneys beans.
Ingredients
A bowl of jumbo shrimp (please defrost if frozen, and strain)
A bowl of carrot/swede
4 lumps of straines chopped spinach
Half a cup of boiled Rice/red kidney beans.
A dash of allpurpose seasoning.
Virgin olive oil( just a small amount to cover the bottom of the Wok.) remember we are trying to be healthy :)
Method
1. Drizzle oil into heated Wok
2. Put in strained shrimp and stir for a 3 mins, add seasoning
3. Add carrot/swede and stir for another 5 mins, then add spinach and stir for another 5 mins
4. Add the boiled rice/red kidney beans, and give it a good stir.
Dish and eat your heart out!!!!!
If u do not like shrimp you can substitute with chicken, and if you don't like the rice either use pasta. I prefer vermicelli with this dish.
I forget to mention I had fried grasshoppers for my snack. ( I can just see your faces now) It's a good source of protein and one of the items in the Bible God said we could eat.
You are now wondering where did i get it?. Mummy dearest sent some over from home, so I just have one more handful left and it's gone.

It's been recommended by the nutritionist at the hospital and I'm meant to be doing my best with it for 6 months to lower my blood cholesterol. I'm being monitored on it so no pressure... LOL!
It's a combination (hence 'portfolio') of foods which are known to reduce cholesterol. You try to include the recommended amount of each one everyday.
Key foods are 30g Almonds; 20g soluble fibre; 2g plant sterols; 25g soya protein
The remainder of the diet is the usual good nutritional stuff with zealous avoidance of saturated fat (lots of label reading!) and generous inclusion of oily and white fish. I look for organic where I can.
It isn't a weight loss issue (though 7lbs would be useful in my eyes), more a question of trying natural methods before recourse to meds.I'm lucky to have got this far with FH before my cholesterol got out of control. My father and grandfather died in their 40s.
